Why we like it

At PYRO Wood-Fired Kitchen & Bar, we craft our Chipotle Aioli in large quantities (like, 11 kg batches at a time) because we, and our customers, absolutely love it!

We've scaled down the recipe for you to enjoy at home, and it should stay fresh in the refrigerator for up to 2 weeks... but trust us, once you start using it, it won’t last nearly that long!

PYRO Chipotle Aioli is a perfect match for Ensenada Style Shrimp Tacos, fries, burgers or sandwiches, chicken salad, grilled corn, and even with nachos!

Preparation Notes

Most grocery stores carry cans of chipotle peppers (smoke-dried ripe jalapenos) preserved in adobo sauce (tomatoes, garlic, vinegar, salt, and spices). These cans provide a convenient and flavourful secret weapon, allowing you to effortlessly add a smoky, mildly spicy kick to your culinary repertoire.

For this recipe, simply open the can, then either mash up the peppers with a fork or blitz them in a food processor along with the adobo sauce before combining with the other ingredients.
