Flamin' Hot Corn Chowder

Why we like it

HEAT WARNING: In this recipe, we’re using only a handful of Flamin’ Hot Cheetos® in place of croutons.

If you and anything with “Flamin’ Hot” in its name do not get along, by all means, feel free to use your favourite chips and/or cheese flavoured snacks instead.

Keep in mind though that since this is a cream-based chowder, much of the heat from the Flamin’ Hot Cheetos® will be minimized in your bowl.

But, for those who are a bit more adventurous, and like to bring some heat to the table, this updated version of the familiar corn chowder will not disappoint.

Preparation Notes

Just like in so many other recipes, it’s important to cut the potatoes into a consistent and uniform size and shape in order to ensure each piece cooks in the same amount of time.

Also… and we don’t want to spoil anyone’s appetite… but no one from L’OCA will judge you if you nibble on some of the Flamin’ Hot Cheetos® while waiting for the chowder to cook.

Making the recipe

  1. Step 1

    Bacon

    • In a large soup pot or Dutch oven, melt the butter over a medium-high heat.
    • Add the bacon and cook for about 4-5 minutes, until crispy and the fat has rendered out.

    Aromatics

    • Add the chopped celery and onions, and cook until softened, about 3-4 minutes.
    • Stir occasionally to scrape up any brown bits on the bottom of the pot.
    • Add the garlic, and sauté until fragrant, about 30 seconds.
    • Season with salt and stir to combine.

    Simmer

    • Deglaze with the broth, then add the half & half, followed by the potatoes and the corn.
    • Increase the heat and bring up to a boil.
    • Reduce heat, and allow to simmer uncovered until potatoes are cooked, about 15-20 minutes.

    Stir & Serve

    • Stir occasionally, and enjoy a handful of Flamin' Hot Cheetos® while you're waiting.
    • Once the potatoes are cooked, season with salt and pepper, then ladle into bowls.
    • Garnish with a handful of Flamin’ Hot Cheetos®, some grated parmesan, and enjoy!
