Crafted in small batches in the village of Corcelles-près-Payerne, this raw cow's milk cheese undergoes a meticulous aging process. After an initial 3-month maturation, it's rubbed with Herbes de Provence, then aged for an additional 2 months to develop a beautiful appearance and its spicy, aromatic flavour.
