From its fertile flatlands to its gentle hills, this is where patient hands age Parmigiano-Reggiano, cure Prosciutto di Parma, craft Bologna's tortellini, and transform grapes into Modena's precious vinegar.

Stuffed Prosciutto di Parma Parcels
Butter-glazed spring asparagus and peas folded through mascarpone, ricotta, and aged Parmigiano-Reggiano, wrapped in Prosciutto di Parma

PRIMO
Cappelletti in Brodo
Hand-filled pasta cappelletti with ricotta, Parmigiano-Reggiano, and nutmeg, floating in a slow-simmered, rich chicken broth

SECONDO
Pollo alla Cacciatora Bianca
Free-range Alberta chicken braised with white wine, garlic, rosemary, and lemon, served alongside wilted spinach and roasted new potatoes
