APPETIZER (choose one)

• Roasted Red Pepper & Tomato Bisque
  A velvety smooth blend of fire-roasted red peppers and tomatoes, drizzled with a swirl of basil oil and parmesan foam
• Roasted Beet Salad
  Mixed greens, candied pumpkin seeds, pickled mustard seeds, and whipped goat and feta cheeses, tossed in a bright lemon vinaigrette

ENTRÉE (choose one)

• Salmon
  Spring salmon with grilled broccolini and charred scallion polenta, topped with crispy Parmesan and a creamy Béarnaise sauce
  
• Sirloin
  AAA Alberta beef served with honey-glazed “burnt” Brussels sprouts, a crispy potato pavé cooked in beef fat, finished PYRO style with peppercorn and Cognac
