What we’ll cover

Join us for a trip down memory lane with PYRO’s Chef de Cuisine, Max as he shares some family favourites from his childhood.

Chef Max’s Polish upbringing laid the foundation for his incredible culinary career, which has led him to work at five Michelin-starred restaurants across Europe, including being part of the team that earned Poland its very first Michelin star.

In our hands-on Modern Polish Cuisine class, Chef Max will guide you through every step of the process of preparing a delicious two-course Polish meal with an updated twist!

Start the meal off by preparing a Polish Tatar, made with hand-cut, raw beef, egg yolk, onion, chopped Polish pickles and pickled mushrooms, and served with L’OCA’s famous sourdough, and a mandatory (small) shot of Polish wódka!

Then, master the art of making two iconic Polish dishes: pierogi and bigos.
Pierogi Ruskie, hand-filled with potato and cheese, are served with an onion butter sauce and bacon bits.
Bigos, a 'hunter's stew,' is comprised of braised cabbage, pork sausage, bacon, and a traditional blend of Polish spices, including juniper berries, caraway seeds, and bay leaves.

After you’ve enjoyed your meal, Chef Max has prepared a take-home treat, a slice of Placek z Kruszonką, a Polish coffee crumb cake.

About your instructor

Chef Max Straczek

After rising through the culinary ranks in Vancouver, Chef Max Straczek spent five years abroad working and traveling through London, Spain, Cyprus, and finally to Poland, where he was an integral part of opening Atelier Amaro - the country’s first restaurant to be awarded a Michelin star!

Upon his return to Canada, Straczek first held the title of Concept Chef for both Fable Kitchen and The Diner, before lighting the fire at PYRO! Max is bringing the heat to L’OCA Quality Market, and is dedicated to sharing a wealth of experience with the next generation of great chefs!

Enter through the South Entrance: Proceed straight towards the back of the building. L'OCA Labs is located just to the right of PYRO Pizzeria & Rotisserie.

Enter through the West Entrance: Proceed straight, past the green automobile in the produce department, turn left and continue towards the back of the building. L'OCA Labs is located just to the right of PYRO Pizzeria & Rotisserie.
