This month, PYRO opens the doors to SOUTH KOREA, where the lively art of grilling brings people together around time-honoured dishes, a vibrant street food culture, and bold, complex layers of flavour.
PYRO’s Global Grill Series: South Korea menu features:
Oi Muchim 오이무침 (oh-ee moo-cheem)
A refreshingly spicy cold cucumber salad, tossed with Gochugaru (Korean chili flakes), garlic, sesame oil, and vinegar.
Musaengchae 무생채 (moo-sang-cheh)
A crisp salad of thinly sliced daikon radish, lightly pickled in vinegar, sugar, and salt, then tossed with Gochugaru (Korean chilli flakes), offering a refreshing contrast to the richness of the grilled meats.
Galbi 갈비 (gal-bee)
One of Korean BBQ’s most beloved dishes, tender beef short ribs marinated in a sweet-savoury blend of soy sauce, pear, garlic, and sesame oil, then grilled until beautifully caramelized.
Bulgogi 불고기 (bool-go-gee)
Thinly sliced beef, marinated in a balanced mixture of soy sauce, sesame oil, garlic, and sugar—with a touch of pear for extra tenderness—then quickly pan-seared and served sizzling hot.
Ssam 쌈 (sahm)
Fresh lettuce leaves paired with Ssamjang (a rich fermented soybean and chilli paste) offer the perfect vessel for wrapping savoury grilled meats like Galbi and Bulgogi.
Tteok-Mu Kimchi Jeon 떡무김치전 (dduk-moo kim-chee jun)
An umami-packed Korean-style pancake that marries the tangy flavours of kimchi with the crisp freshness of radish, and the chewy texture of rice cakes, all fried to a golden, crispy perfection.
