Bistecca alla Fiorentina
A massive bone-in Porterhouse, seasoned with salt, brushed with olive oil, and seared over open flame to create a smoky crust and melt-in-your-mouth tenderness. Traditionally served rare.
Tuscan Beans in Tomato Sauce
A comforting Tuscan-style staple, named for the region’s love of beans, made with creamy cannellini simmered in a rich tomato sauce with garlic and sage.
Polenta Taragna (Cheesy Polenta)
A creamy buckwheat polenta, inspired by the Lombardy region’s mountainous cuisine, enriched with butter and aged cheese, offering a velvety texture and deep, nutty flavour.
Balsamic Roasted Onions
Red onions slow-roasted in our forno to bring out their natural sweetness, glazed with balsamic vinegar and rosemary until deeply caramelised.
Harvest Salad of Bitter Greens & Pears
A salad of bitter greens and charred, sweet pears, inspired by Umbrian tradition, tossed with balsamic glaze for a bright and balanced finish.
