That’s how Chef Fabricio Daros describes Cooking With Fire, an outdoor grilling masterclass rooted in the fundamentals of cooking over open fire and bringing out the rich flavours of meat.
Born and raised on the prairies of Brazil, Chef Fabricio learned from his mother to respect the farmers who produce the beef, lamb, and pork we eat, to utilise every part from nose to tail, and to cook over open fire with charcoal, woodsmoke, and instinct.
After meeting in the lobby of PYRO Wood-Fired Kitchen & Bar, you’ll be welcomed with a cocktail before Chef Fabricio leads you to one of our patios to introduce key techniques like direct and indirect heat, the importance of proper seasoning, and when to use dry rubs or marinades.
Then, Chef Fabricio will begin preparing an outdoor flame-kissed feast featuring four premium beef cuts from the L’OCA Butcher Shop, alongside handpicked selections of pork, lamb, poultry, and game, served with our signature garlic bread and a generous spread of seasonal vegetables.
Throughout the feast, each guest will also enjoy two beverages of their choice, beer or wine, expertly handpicked by Chef Fabricio to enhance the rich, smoky flavours of the meat you’ll be preparing and tasting.
PLEASE NOTE: Cooking With Fire will be held entirely outdoors and is subject to weather conditions.

About your instructor
Chef Fabricio Daros
Born and raised on the prairies of Brazil, Chef Fabricio Daros brings a rich culinary heritage to L’OCA Quality Market.
His mother, a pastry chef, instilled a respect for small farmers and introduced him to the Uruguayan parrilla tradition of cooking an entire animal with charcoal over an open fire.
His father, a baker of Italian descent, helped Chef Fabricio develop a deep appreciation of Mediterranean ingredients and flavours.
Chef Fabricio feels that food has always been the language that connects him with other people and to the land.

Once I arrive at L'OCA Quality Market, how do I find L’OCA Labs?
The L'OCA Labs Signature Kitchen Suite is located inside our flagship Sherwood Park, Alberta location.
If entering through the South Entrance: Proceed straight towards the back of the building. L'OCA Labs is located just to the right of the Pizzeria & Rotisserie.
If entering through the West Entrance: Proceed straight, past the green automobile (trust us, you can't miss it) in the produce department, turn left and continue towards the back of the building. L'OCA Labs is located just to the right of the Pizzeria & Rotisserie.
