This Halloween, join us for A Certain Refinement, a Hannibal Lecter–inspired dinner that blurs the line between elegance and the macabre.
Hosted inside L'OCA Labs, this immersive dining experience draws from the refined tastes of Dr. Lecter himself: classical music, fine wine, and dishes that are as decadent as they are daring.
The line between elegance and horror is best savoured slowly — and on this night, every detail has been crafted to unsettle as much as it delights.
After all, decency is never as delicious as refinement.
Feel free to dress however you wish — whether in elegant evening wear, a subtle nod to the season, or your own unique interpretation of the macabre.

The Menu

First Indulgences

  • Duck Liver Mousse on Brioche – rich and silky, topped with cherry compote and fava beans
  • Heart & Tuna Tartare – beef heart and bluefin tuna, quail egg yolk, microgreens, edible flowers
  • Lamb Tongue Carpaccio – thinly sliced, slow-cooked lamb tongue, balsamic & black garlic vinaigrette

An Offering of the Sea

  • Clay-Baked Salmon Loin – red wine butter sauce, melted leek, confit fennel, crispy shoestring potatoes

The Main Obsession

  • Roasted Bone-In Elk Loin – blood orange & juniper sauce, sautéed mushrooms, smoked celeriac purée

A Dark Conclusion

  • Flat to Black… – chocolate blood crémeux, black cocoa crumb, raspberry coulis

About your instructor

Chef Max Straczek

After rising through the culinary ranks in Vancouver, Chef Max Straczek spent five years abroad working and traveling through London, Spain, Cyprus, and finally to Poland, where he was an integral part of opening Atelier Amaro - the country’s first restaurant to be awarded a Michelin star!

Upon his return to Canada, Straczek first held the title of Concept Chef for both Fable Kitchen and The Diner, before lighting the fire at PYRO! Max is bringing the heat to L’OCA Quality Market, and is dedicated to sharing a wealth of experience with the next generation of great chefs!
