Apfelstrudel, pronounced AP-ful-s-stroo-del, is a traditional Viennese pastry that looks as irresistible as it tastes… and is easier to make than you might think.
In the Apfelstrudel Masterclass, Chef Fabricio Daros will take you on a hands-on journey dedicated to this iconic pastry. You’ll learn how to:
- Stretch the delicate dough to achieve the signature paper-thin layers
- Prepare a flavourful, perfectly spiced filling with apples, cinnamon, and raisins
- Master the proper techniques for rolling, baking, and serving the strudel
- Finish the pastry with classic touches like powdered sugar and crème fraîche
By the end of the class, you’ll be able to make a warm, golden, fragrant Apfelstrudel at home to enjoy yourself, or to impress almost any guest.

About your instructor
Chef Fabricio Daros
Born and raised on the prairies of Brazil, Chef Fabricio Daros brings a rich culinary heritage to L’OCA Quality Market.
His mother, a pastry chef, instilled a respect for small farmers and introduced him to the Uruguayan parrilla tradition of cooking an entire animal with charcoal over an open fire.
His father, a baker of Italian descent, helped Chef Fabricio develop a deep appreciation of Mediterranean ingredients and flavours.
Chef Fabricio feels that food has always been the language that connects him with other people and to the land.
