This is Gouda without the sharp edges. Aged for 8 to 12 weeks, L’OCA Mild Gouda has a soft, sweet finish and a delicate flavour that’s been described as “lightly fudgy with nuts, but very, very, very mild.” Made here in Alberta with 100% A2 milk, it’s a perfect cooking cheese that’s also gentler on the stomach.
